Why people make this soup

People with a weak spleen tire easily — especially when the weather turns cold, they nod off for no reason, digest poorly and lose their appetite, which leaves them low on energy and aching all over. Winter is a good time to build up the body, but many people can’t take strong tonics; one mouthful and their gums swell up. This is where Chinese yam, goji, fox nut, chestnut and red dates come in: all gentle, balanced foods that traditionally help strengthen the constitution and a weak spleen and stomach without that overheating feeling.

Method

  1. Soak and wash the dry ingredients separately.
  2. Drop the chestnuts into boiling water briefly, then peel off the inner skins.
  3. Pit the red dates; blanch the pork ribs.
  4. Put everything into a pot with 8 bowls of water.
  5. Simmer 2 hours until reduced to about 4 bowls. Serve.
