Why people make this soup
People with a weak spleen tire easily — especially when the weather turns cold, they nod off for no reason, digest poorly and lose their appetite, which leaves them low on energy and aching all over. Winter is a good time to build up the body, but many people can’t take strong tonics; one mouthful and their gums swell up. This is where Chinese yam, goji, fox nut, chestnut and red dates come in: all gentle, balanced foods that traditionally help strengthen the constitution and a weak spleen and stomach without that overheating feeling.

Method
- Soak and wash the dry ingredients separately.
- Drop the chestnuts into boiling water briefly, then peel off the inner skins.
- Pit the red dates; blanch the pork ribs.
- Put everything into a pot with 8 bowls of water.
- Simmer 2 hours until reduced to about 4 bowls. Serve.
